Shrimp Fettuccine Pasta

This pasta is immerged into a flavorful creamy sauce fused with Caribbean flavors. Perfect dish for a romantic dinner or to enjoy it with family and friends.

Ingredients
  

  • 2 Lbs  raw shrimp-  peeled and deveined
  • 16 oz fettuccine pasta
  • 3 tbsp  extra virgin olive oil
  • 4 cloves minced garlic
  • 1/4  chopped white onion
  • 1/4 cut sliced fresh red bell pepper
  • 1 scallion- only 1 scallion from the bunch
  • ground black pepper to taste-  add moderately as you will be adding some more at the end
  • crushed red pepper to taste-  this recipe only includes a small hint of crushed pepper flakes
  • 1/2  fresh squeezed lime juice –  lime is used for the shrimp to add acidity to the marinade
  • 1 tbsp Adobo Goya -all-purpose seasoning (with pepper)
  • 2 tbsp  unsalted butter
  • 1/2 jar  Carbone tomato basil sauce- You can use another brand, however that's it the brand I used for this recipe
  • Fresh parsley, chopped- (for garnish)
  • 1/4 cup white cooking wine – (optional)
  • 2 cups  heavy cream
  • 1/2 cup  shredded parmesan cheese
  • 1 pack Sazón Goya-  make sure you get the one with "culantro and achiote" read the box carefully when buying as there is a similar seasoning box with "azafran" INSTRUCTIONS

Instructions
 

  • Add lime juice to the shrimp and marinade with adobo, black pepper, Sazon Goya and salt.
  • In a large skillet, heat olive oil over medium heat; sauté the red pepper, onion and scallion with garlic, butter, and red pepper flakes.
  • Add the shrimp and sauté until pink for about 2 minutes per side.
  • *****Start the pasta fettuccine in boiling salted water while you continue with the recipe. (1 liter of water for every 100 g of pasta, 1 teaspoon of salt per 2 liters of water). Do not forget to stir to prevent pasta sticking to the pot. Fettuccine cooking time is between 8 to 10 minutes.
  • Add Carbone tomato basil sauce, and cooking wine and stir, next garnish with chopped parsley.
  • Pour heavy cream and add Parmesan cheese. This is the time you must stir and taste and add salt if needed.
  • Combine cooked fettuccine and shrimp mixture sauce
  • All mixed 🙂 next, top with additional parmesan and black pepper to taste.
  • Now is time to sit, relax, and enjoy!
