Shrimp Stir Fry

The origins of “stir frying” commonly referred to “wok frying” technique can be traced back to China. In 1966 wok technique became the modern trend allowing people for quick cooking in hot oil. This recipe is not authentic per say, but it is my way of cooking it adding my own twist, while appreciating the Asian culture.

Shrimp Stir Fry is a popular dish in Asian Cuisine, particularly in Chinese, Thai, Vietnamese, and Indonesian cooking. The specific ingredients and seasoning used varies depending on the country and region. On this, my recipe, I chose specific vegetables of my liking, used some common ingredients, and then added my own twist with Latin Seasoning. There is no right or wrong way of cooking this recipe as long as you "stir fry" the ingredients, and the main protein component of the dish. Ingredients
  

  • 2 Lbs raw shrimp- peeled and deveined
  • 2 oz scallions
  • 3 oz vegetable oil mixed with sesame oil Please note you are using half of the oil for stir frying the shrimp and the other half for stir frying the vegetables. When you combine the protein with the vegetables at the end, you may add more oil if needed.
  • 3-4 cups vegetables- you can choose your own vegetables to stir fry. This recipe uses broccoli, brussels sprout, red cabbage, kale, and shredded carrots. In between other vegetables, you'll see added on this ingredients list.
  • 10 minced garlics
  • 2 oz chopped red onions
  • 2 oz sliced mushrooms
  • 2 oz zucchini
  • 2 oz green peppers-sliced
  • white cooking wine- optional
  • soy sauce- add as much as you like. (Although soy sauce is a crucial ingredient for this dish, this recipe uses moderate amount because there is other seasoning with salt added, and you don't want to make the dish too salty).
  • 1/2 fresh squeezed lime juice- to add to shrimp to marinade
  • salt, pepper, and Adobo Goya-all-purpose seasoning (with pepper) add to taste-Adobo is optional

Instructions
 

  • Preparation:
    Peel and deveined the shrimp.
    Chop/slice 2 oz of each vegetable (onions, zucchini, green pepper, mushrooms, and scallions).
    Mince garlic and add to 3 cups of vegetables mix. (broccoli, brussels sprout, red cabbage, kale, and shredded carrots); add salt and pepper to your liking.
    Measure out seasonings.
  • Add lime juice to the shrimp and add salt, pepper and Adobo seasoning mix together. (just a sprinkle).
  • Heat 1 1/2 oz oil over medium- high heat and stir fry shrimp until pink and cooked through (about 2-3 mins), and quickly add the cooking wine.
  • On a separate pan, heat 1 1/2 oz oil over medium- high heat. Add the onions, mushrooms, scallions, green peppers, and zucchini, and stir for a few seconds. Next, combine the rest of the vegetables to stir fry (broccoli, brussels sprout, red cabbage, kale, zucchini, minced garlic, and shredded carrots). Now combine the shrimp; as you continue to stir fry, add the soy sauce, stir and you will know is ready!
  • Now is time to sit, relax, and enjoy.

Notes

A wok or a large skillet/cast iron frying pan with a non-stick surface is often used for stir-frying.
